Sauvignon as a variety is very demanding. Wines of this variety are often light-bodied, with intense aromatics that can often be aggressive, even too intense. We have a different approach to sauvignon both in the vineyard and in the cellar, all with the aim to obtain a wine that is at the same time fresh, complex, aromatic, but by no means aggressive or too intense in smell. Also, due to long maceration, this wine is very extractive, full, thus balancing the naturally high acid content very well. The wine was aged in 500-liter French tonneau barrels, which gives the sauvignon complexity, balance in the mouth and a very long finish.
